摘要: 肇始于先秦宗庙祭品的“菹”,仅服务于王室与贵族阶层,世俗民众的日常生活难以触及。发展到魏晋南北朝时期,菹的主要功能转变为贮藏食蔬,满足每日膳食所需,并充当宗庙神鬼与人间食味之间的沟通媒介。魏晋之际,食品腌制加工技术趋于成熟,菹作为该时期饮食科技发展的典型代表,可分为菜菹、肉菹与果菹三大类。菹的使用群体与范围尤为广泛,上至建康皇室贵胄,下及齐鲁乡野的布衣耆老,其饮食结构中皆有菹的踪迹。魏晋时人用菹的普遍性,实则植根于这一时期菹之功能的多元发展:菹除了可以用来祭祀与食用,更兼具养身食疗之特殊功效。此外,在江左士人群体中,菹逐渐超越其物质属性,被赋予特定的文化象征意义,成为这一时期饮食文化的重要载体。

Abstract: Originating as sacrificial offering in ancestral temples during the pre-Qin era, or prior to 221 B.C.E., “Zu” was only used for the imperial houses and the noble, far from the common, at the beginning. By the Wei-Jin and Northern and Southern Dynasties, or 220-589 C.E., it evolved into a daily food item primarily used for storage and consumption, serving as a link between the spiritual realm of temple immortals and the flavors of the mortal world. During the Wei-Jin period when food pickling technology gradually matured, Zu was utilized, as a symbol for food science and technology advancements in this era, by people of wider social classes in various contexts–from the imperial houses and nobles in Jiankang (modern Nanjing) to the common elders in the villages of Qilu (modern Shandong Province). This widespread use was rooted in the diverse evolution of its functions: besides its presence in sacrifices and daily diet, it also possessed special properties for health preservation and medical treatment. Furthermore, among the literati in Jiangzuo, the most prosperous areas of China along the lower reaches of the Yangtze River, Zu gradually transcended its physical attributes to acquire specific cultural symbolism, thus becoming an important carrier of the culinary culture of the time.
