抗战时期大后方内迁商业品牌经营模式研究——以昆明冠生园为例

Study on the Business Model of Commercial Brands Moving to the Unoccupied Southwest during the Resistance War against Japanese Aggression— Taking Kunming Guanshengyuan as an Example

摘要: 全面抗战爆发后,由冼冠生创立的餐饮品牌“冠生园”因战争内迁,后于云南昆明设立支店。昆明冠生园的立足与发展,源于其坚持广府饮食文化特色,兼顾云南乃至国际饮食文化,并结合多方位的经营,以拓宽市场。沐浴在滇风粤雨中的昆明冠生园在发展中将广东乃至国外文化影响至西南边疆,也从云南的多样文化中汲取企业发展的养分,并通过资金捐助与物资捐助的方式对昆明乃至云南的发展提供帮助。不可否认,昆明冠生园在发展中也曾陷入误区,但最终摸索出长久发展的经营之道,时至今日仍受云南及外省人民青睐。本文以抗战时期昆明冠生园的经营模式为案例对象,采用历史学的研究方法,运用档案、报刊、日记等史料,得出其经营模式或可成为战时内迁至大后方的商业典型个案。该结论可为当下企业的本土化经营战略,提供历史经验与现实指引,亦展现出文化交融发展下的多元脉络,进而重新审视大后方商业在抗战史乃至在中国近代史中的历史地位。

Abstract: After the outbreak of the War of Resistance against Japanese Aggression (1937-45), the restaurant brand Guanshengyuan founded by Xian Guansheng relocated to the unoccupied inland. A branch of it chose to settle in Kunming, Yunnan Province. The founding and development of Kunming Guanshengyuan are attributed to two principles: adherence to the traditional Guangdong food culture and integration of Yunnan and even international food cultures, not to mention its multi-faceted operation modes adopted to open up the market. Bathed in Yunnan wind and Guangdong rain, Kunming Guanshengyuan has brought elements of Guangdong and even foreign cultures to the southwest, and vice versa, benefiting its overall corporate development in general. Through donation and other funding efforts, it has also greatly assisted the development of Kunming and even Yunnan Province. Undeniably, it also experienced mistakes in its course of development, but eventually found a way to sustain development in the long run. It is a name brand that has won established admiration from consumers in and out of Yunnan. Therefore, the paper adopts as research method historiography and utilizes as data archives, newspapers, diaries and other historical materials to study the business model of Kunming Guanshengyuan during those war years. The research concludes that its business model can be a representative case among businesses relocated to the unoccupied southwest during the wartime, a contention that can provide historical experience and practical guidance for the localization strategies of contemporary enterprises. Moreover, it shows the diversified veins under the development of cultural intermingling so as to re-examine the historical position of businesses in the unoccupied southwest in the history of the Resistance War against Japanese Aggression and even that of modern China in general.
