Inheritance, Transformation and Utilization of the Culture of Song-style Food

Abstract: Enriching and developing culture related to the South Song Dynasty (1127-1279) can be of great importance for inheriting and building the cultural essence of the Song-style food and creating the intellectual property system characterized with Song food+. The following measures and suggestions are hereby made for inheriting, transforming and utilizing Song-style food: 1) exploring the cultural content of Song-style food to enhance confidence in traditional food brands; 2) restoring a number of brand-name restaurants, wine shops and tea houses with Song origin to demonstrate the unique charm of Song culture and Song food; 3) restoring Banjing Mansion in Linan, the State Guesthouse of the South Song Dynasty; 4) building a commercial street - the Beiguan Night Fair - near the lakeside villas along the Grand Canal to boost nighttime tourism; 5) upgrading the exhibits in the Hangzhou Culinary Museum to display the culture of Song-style food; 6) creating research bases and other platforms for Song-style food to cultivate multiple-dimensional researchers, and exploring “standardized+” Song-style food processing procedures to boost brand construction of Song-style food; and 7) building the signature intellectual property of Su Dongpu (1037-1101) as a great Song food connoisseur.
